先把老鼠粉以滚水煮片刻再炒,老鼠粉的口感会更滑嫩。要加蛋的可以自行加入,拍摄天我忘了买鸡蛋,所以没加🤣 配上自家腌制的青辣椒,这Q弹滑嫩的住家炒老鼠粉太好吃了啦! 分量:4 - 5人份 准备时间:10分钟 煮时:20分钟 材料A: 650克 老鼠粉 300克 芽菜 200克 波仔肉/ 瘦肉(切片) 2条 鱼饼(切片) 5辨 蒜头(去衣剁末) 4汤匙 油 材料B(调味料): 1汤匙 酱油 1汤匙 黑酱油 1茶匙 蚝油 1汤匙 水 少许 盐 准备功夫: 1. 烧热一锅水, 加入老鼠粉,水煮片刻/15秒,沥水待用 2. 把材料B拌匀待用 煮法: 1. 烧热锅,加4汤匙油待热 2. 加入蒜头,炒匀爆香 3. 下波仔肉,炒至变色 4. 加入鱼饼和老鼠粉,拌炒片刻 5. 加入调味料和芽菜,拌匀至芽菜变软 6. 熄火出锅,趁热享用

Fried Lou Shu Fun 炒老鼠粉

minutesLou shu fun a.k.a. loh shu fun, pin rice noodle, silver needle noodle, mouse-tail noodle(!?) – there are just so many names! To make the lou shu fun smoother in texture, blanch it with boiling water first before frying.
Ingredients
- Ingredients A
650 g lou shu fun
300 g bean sprouts
200 g lean meat (slice)
2 pc fish cake (slice)
5 cloves garlic (peel off the skin, mince it)
4 tbsp cooking oil
- Ingredient B (Seasoning)
1 tbsp soy sauce
1 tbsp dark soy sauce
1 tsp oyster sauce
1 tbsp water
Some salt
Instructions
- Preparations
- Heat the wok with water, add lou shu fun & cook for 15 seconds, drain and set aside
- Mix all Ingredients B well & set aside
- Steps
- Heat the wok with 4 tbsp cooking oil
- Add garlic and saute
- Add lean meat, fry until it is cooked
- Add fish cake & lou shu fun, fry evenly
- Add seasoning & bean sprouts, fry evenly until bean sprouts soften
- Turn off the gas, let’s serve!
