罗汉斋的主要食材通常有冬粉,腐竹,包菜或大白菜。至于其他素食材,随意加入就可以了。今年我们做的斋菜,就来道清口味的,不加南乳, 只用盐和酱油来调味,也是很好吃的。吃过这道清心罗汉斋后,祝大家在新的一年里,万事胜意, 财运亨通,幸运一条龙! 分量:5-6人份 准备时间:15分钟 煮时:20分钟 材料A: 350克 金马仑包菜(撕小片) 10片 胡萝卜(去皮切片压花) 20条 荷兰豆(去丝) 6条 玉米芯(切小段) 10克 云耳 (泡软) 20克 冬粉(泡软) 3粒 冬菇(泡软切4边) 材料B: 2片 腐竹片 材料C: 1汤匙 酱油 1茶匙 盐 1碗 热水(盖过菜) 2汤匙 油 准备功夫: 1. 把甜豆,玉米芯和云耳各别焯水,沥水出锅待用 2. 腐竹片抹净,爆至金黄色,沥油待用 煮法: 1. 热锅,加入2汤匙油,下香菇和云耳,爆炒片刻 2. 加入包菜和胡萝卜, 伴炒至包菜变软 3. 加入热水,炒匀待滚 4. 加入冬粉, 腐竹, 酱油和盐,炒匀盖上,文火焖3分钟 5. 起盖, 转大火伴炒 6. 加入荷兰豆和玉米芯,炒匀收水 7. 斋菜出锅,趁热享用

Buddha’s Delight (Lo Han Jai) 罗汉斋

minutesBuddha’s Delight, also known as Lo Han Jai, primarily comprises glass noodles and cabbages. You can, however, feel free to add other vegetarian ingredients of your choice. Instead of using fermented red bean curd, we seasoned it with just salt and soy sauce to present a lighter flavour profile. Gong Xi Fa Cai to all of you!
Ingredients

350 g cabbage (torn into pieces)
10 slice carrot (peel, slice & make flower)
20 pc snow pea (remove strings)
6 pc baby corn (cut)
10 g cloud ear fungus (soaked)
20 g glass noodles (soaked)
3 pc shiitake mushroom (soaked & cut into 4 pieces)

2 pc beancurd sheet
- Ingredients C
1 tbsp soy sauce
½ tsp salt
1 bowl hot water (enough to submerge vegetables)
2 tbsp cooking oil
Instructions
- Preparations
- Blanch snow peas, baby corn & cloud ear fungus, drain & set aside
- Wipe the beancurd sheet, saute until it turns golden brown, drain and set aside
- Steps
- Heat the wok, add 2 tbsp cooking oil, cloud ear fungus & fry briefly
- Add cabbage, carrot & fry until cabbage softens
- Add hot water, soy sauce & bring to boil
- Add beancurd sheet, glass noodles & fry, cover with a lid & simmer for 3 minutes with medium heat
- Lift the lid, switch to high heat, fry briefly
- Add salt, snow peas & baby corn, fry well
- Turn off the gas, it’s done!
