糖醋鱼 Sweet & Sour Fish
如果买得到大石斑鱼,就用石斑鱼,鱼肉比较厚又少骨,更好吃。拍摄天我买不到石斑,所以只好用红枣鱼,也不错啦,只是肉质没石斑鱼肥美。糖醋酱的配菜,先用油炒两下(拉油)才加入糖醋酱。这样不只是可以去掉菜的青味,菜吃起来也会更爽脆,色泽更美丽。还有,饭要煲多点,因为这糖醋酱是很下饭的,小朋友会是要加饭滴。Best to use garoupa fish for this dish as it’s more meaty and less bone, we couldn’t get it on the filming day so we use red snapper instead, which is not bad too! Most kids love sweet & sour fish, how about yours?

年糕 Nian Gao
我们家做的年糕是焦糖款年糕,简易又省时省煤气。年糕模具不用特别买,用龙眼/杂果罐,不然炼乳罐也可以。包上香蕉叶,就可以开始做制作年糕了。焦糖煮法有两种,一种是糖加水慢煮,须时比较久。另一种是不加水,直接把白糖煮至焦糖。我是用不加水的方式煮焦糖的,快手又省工。 前提是用厚底的锅来煮,比较容易掌控。蒸年糕时用片锡纸封口防滴水,蒸出来的年糕就会是又滑又美的。没做过年糕的朋友,来年你也就试做这好看又好吃的年糕来应节吧!We kick-start the 2023 CNY recipe with this nian gao (Chinese New Year rice cake) recipe, have you tried making this yourself?

客家木耳焖炸肉 Hakka Braised Pork Belly with Black Fungus

胡椒猪肚汤 Pig Stomach with White Pepper Soup

虾枣春卷 Fried Prawn Roll
啊Hong家的虾枣春卷做法是会先把春卷放在个架子上蒸熟待凉后才炸。因为架子在蒸的过程中能沥去春卷的蒸气水份,腐皮就不会因为有积水而糊掉。春卷蒸熟后要先待凉,这样春卷会是更容易处理的。然后,把春卷切小块,沾上薯粉,下油锅炸至金黄色。 一道大人小孩都爱吃的酥脆虾枣春卷就做好啦!Bored of spring rolls? 海参焖猪脚 Braised Pork Trotters with Sea Cucumber
啊Hong用的海参是现成已经泡发的,海味干粮店或药材店都买得到。因为省略了泡发海参的准备功夫,这菜容易做得多了。啊Hong也说到火蒜是这菜的精髓,切莫以蒜头替代火蒜来做这菜。不然,会做不出这菜的原有风味。同时,为保持海参的脆嫩口感,海参的焖煮时间也不宜过长,大盖20分钟,入味就好了。今天就把这福建年菜学上来,过年又多道年菜来贺年啦。According to Hong, roasted garlic (don’t use the usual garlic) is the essence of this braised Hokkien dish.

酸辣芥菜(素) Assam Mustard Green (Vegetarian)
亚叁皮是一种酸味果肉切片晒干而成的本地食材。除了辣椒干,亚叁皮就是煮这酸辣芥菜不能少的灵魂食材。亚叁皮的酸香味特殊,同样是酸辣口味的亚叁叻沙也都须要这食材才能做得到味。荤食的酸辣芥菜因为有加入带油脂的肉类熬煮,所以不须加菜油也能把芥菜煮得软滑,煮素的则需要另加入菜油。不然,芥菜口感会是又老又干柴。配料食材没特定,不吃豆腐卜的可以自行把它换成炸腐竹,金针菇,面筋等等都可以。年初一吃素的朋友,今年不妨也多加这道酸辣芥菜。酸酸辣辣的一道斋菜,很下饭的。This is the vegetarian version of the famous Hakka “leftover dish”. 雪山飞狐 Salt-Crusted Baked Fish
雪山飞狐其实就是盐山烤鱼啦。很多年前不记得那间店家为这菜取名叫雪山飞狐,英文名叫Snow Mountain Flying Fox, 单读菜名就另人会心一笑。所以,当厂家Oasis Live Mall来做客时,就建议不如用他们家的小神器气炸锅做这道菜。做法简单,在鱼身上涂一层盐酱,送进气炸锅,不须看火,30分钟后鱼就烤好了。再来做个自调泰式沾鱼酱,简易又好吃的一道年菜就完成了。“Flying Fox of Snowy Mountain” is another cheeky name for this dish, sounds like a big dish but it’s actually very easy to make with an air fryer!

脆皮烧肉 Roasted Pork Belly with Crispy Crackling
Oasis Live Mall的Chef Henry说只要猪皮在烘烤前做到够干身,再涂一层醋风干,烧肉的脆皮就能做得成了。至于为何要在猪皮上撒层盐巴,原因是盐巴在烘烤时还会再吸取多余的水份,同时防止猪皮因烤的时间过长而焦了。所以,第一阶段的烧烤时,盐巴起了护层做用。然后,去掉盐巴层后才来做第二阶段的烧烤,皮就能烤得脆口又不焦黑了。How can you make roasted pork with crispy crackling? Watch this recipe video to find out how it can be done by using an air fryer.

芦笋炒带子 Stir-Fried Asparagus with Scallop
视频用的这类芦笋很嫩的,只须去掉比较硬的尾部,加点热水炒片刻就熟了,口感爽脆。至于带子,去冷藏海鲜店就买得到了。带子煮前要先解冻,然后用滚烫的水把带子焯水。这个步骤很重要,带子不焯水直接入锅煮,除了会释放出过多的水份,也会因突然收缩变小粒而影响了整道菜的卖相。煎带子时要用文火煎,大火煎的话带子的外层很容易就变焦黑。因为买到的带子很大粒,煎时同时加盖焗片刻,带子就能煎得内外同熟。至于如何判断带子已经煮熟了,当带子的中心点爆裂时就是了。这做法的带子很鲜嫩很好吃,新年就做这道菜贺年吧! 黄金炸虾球 Golden Prawn Balls
我们家的炸虾球做法是首先把大虾去壳和肠泥留尾,加点盐,粟粉和蛋白腌制片刻。粟粉和蛋白的作用是在盐腌制时和炸的过程中维持虾的鲜嫩度。再来,讲讲我们家的炸粉浆。主要食材是自发面粉,原因是这粉已经加入泡打粉的,遇水加热即会膨胀,能增加炸浆的脆度。另外,我们还加入鸡蛋和少许的粘米粉来增加炸粉浆的酥脆度。至于水的份量,只要加至粉浆稠得可以流动就可以了。炸粉浆调好后,要现炸。因为粉浆待久了会变黏性,粉浆会比较难炸得起。至于炸虾后剩余的粉浆我们也不浪费,加入白洋葱圈再继续炸,吃炸虾球之余又多了一份小吃,太美味了啦。 Watch this recipe video and find out how to make crispy batter for prawns, you can reuse the batter to deep fry onion too!

玉兰鸡(蒸鸡)Steamed Chicken
