材料A (醉鸡汤汁):
300毫升 水
1茶匙 枸杞
1粒 八角
4片 当归
5片 姜
2棵 葱
2汤匙 花雕酒
适量 盐
材料B:
2只 鸡腿 (去骨)
适量 盐
2张 锡纸
少许 芫荽 (装饰)
醉鸡汤汁做法:
1. 锅中放入300毫升水,加入材料A (花雕酒和盐除外),盖上大火煮滚
2. 起盖,加入花雕酒和盐,搅匀,熄火待凉
醉鸡卷做法:
1. 在鸡腿肉上划刀,平铺在锡纸上面,抹上适量的盐,然后把鸡腿卷成条装,再把锡纸卷上,两头扎紧成糖果形状
2. 煮滚一锅水,把鸡腿卷放进蒸笼,大火蒸10分钟,取出冰镇片刻至鸡腿卷凉透
3. 把鸡腿卷移出锡纸,加入含有醉鸡汤汁的盒子,密封放入冰箱浸泡24小时
4. 取出醉鸡卷,切厚片, 撒上芫荽做装饰,完成

Drunken Chicken Roll 醉鸡卷

Ingredients
- Ingredients A (for Gravy)
300 ml water
1 tsp wolfberry
1 pc star anise
4 slices chinese angelica root
5 slices ginger
2 stalk spring onion
2 tbsp shaoxing wine
Some salt
- Ingredients B
2 drumstick (boneless)
Some salt
2 pc aluminium foil
Some coriander (for dressing)
Instructions
- Steps (for Drunken Chicken Sauce)
- Pour 300 ml of water into a pot, add Ingredients A (except shaoxing wine and salt), cover with a lid and bring it to boil with high heat
- Lift the lid, add shaoxing wine, salt and mix well, turn off the gas and leave it to cool
- Steps (for Drunken Chicken Roll)
- Slice the drumsticks, apply some salt on the aluminium foil, roll the drumsticks, then wrap it with aluminium foil, tie both ends to form candy shape
- Bring a pot of water to boil, insert chicken roll and steam for 10 minutes with high heat, retrieve the chicken roll and submerge it with ice water, leave it to cool
- Retrieve the chicken roll from the aluminium foil and add it into a container filled with drunken chicken sauce, seal and insert the container into the fridge for 24 hours
- Retrieve the chicken roll, cut into pieces, dress it with coriander, it’s done!
