亚叁皮是一种酸味果肉切片晒干而成的本地食材。除了辣椒干,亚叁皮就是煮这酸辣芥菜不能少的灵魂食材。亚叁皮的酸香味特殊,同样是酸辣口味的亚叁叻沙也都须要这食材才能做得到味。荤食的酸辣芥菜因为有加入带油脂的肉类熬煮,所以不须加菜油也能把芥菜煮得软滑,煮素的则需要另加入菜油。不然,芥菜口感会是又老又干柴。配料食材没特定,不吃豆腐卜的可以自行把它换成炸腐竹,金针菇,面筋等等都可以。年初一吃素的朋友,今年不妨也多加这道酸辣芥菜。酸酸辣辣的一道斋菜,很下饭的。 分量: 5-6人份 准备时间:15分钟 煮时:1个小时 材料A: 1.5kg 金马仑芥菜(洗净切大片) 2粒 番茄 (切4边) 1条 胡萝卜(去皮切小块) 5粒 香菇(泡软) 5片/1段 姜 20条 辣椒干(泡软) 10片 亚叁片 20粒/2包 豆腐卜 3公升 水 3汤匙 油 材料B: 3汤匙 酱油 1汤匙 素蚝油 3汤匙 番茄酱 1茶匙 盐 煮法: 1. 姜片加入汤锅,煸香 2. 加入3汤匙油,香菇,番茄和胡萝卜,炒匀爆香 3. 把3公升的水加入,辣椒干和亚叁片, 盖上大火煮滚 4. 起盖,加入番茄酱, 酱油, 素蚝油和金马仑芥菜,拌匀盖上,大火煮滚, 转慢火煮40分钟 5. 起盖,加入盐调味 7. 加入豆腐卜,拌匀盖上, 大火煮2分钟 8. 熄火,上桌

hourThis is the vegetarian version of the famous Hakka “leftover dish”. How about cooking this especially if you are on a vegetarian diet during the first day of CNY?
Ingredients
- Ingredients (Set A)
1.5 kg mustard green (wash & cut it)
2 pc tomato (cut into 4 pieces)
1 pc carrot (peel off skin & cut it)
5 pc mushroom (soak it)
5 pc ginger
20 pc dried chilli (soak it)
10 pc asam keping
20 pc fried tofu puff
3 kg water
3 tbsp cooking oil
- Ingredients (Set B)
3 tbsp soy sauce
1 tbsp vegetarian oyster sauce
3 tbsp tomato
1 tsp salt
Instructions
- Add ginger into the pot and dry fry
- Add 3 tbsp cooking oil, mushroom, tomato, carrot and saute
- Add 3 litre water, asam keping & dried chill, cover with a lid and bring to boil
- Lift the lid, add tomato sauce, soy sauce,vegetarian oyster sauce & mustard green, stir well and cover, bring to boil with high heat, then change to low heat for 40 minutes
- Lift the lid, add salt to season
- Add fried tofu puff, stir well and cover, boil with high heat for 2 minutes
- Turn off the gas, it’s done!
