烧鸭和鸡,买现成的,盆菜准备工夫就少一半了。剩余材料的做法不过是炸,烫,煮而已,一道有鲍鱼,海参,大虾等等的豪华年菜就完成啦!

材料A:
花菇 – 5粒
蠔豉 – 6粒
干贝 – 5粒
材料B:
大白菜 – 半颗
西兰花 – 1颗
大虾 – 5只
材料C:
芋头 – 1颗(去皮切片)
豆根 – 1包 (切块)
材料D:
烧鸭腿 – 1只 (斩件)
烧鸡腿 – 1只 (斩件)
鲍鱼 – 5粒(罐头鲍鱼)
鱼漂 – 1块 (泡软切块)
海参 – 1条 (冷藏已泡发, 洗净切块 )
调味料:
鸡高汤 – 3碗/ 800毫升
蚝油 – 3汤匙
酱油 – 1汤匙
麻油 – 2汤匙
糖 – 2茶匙
茨粉 – 1汤匙(1汤匙水搅匀)
准备功夫:
1. 材料A隔夜浸水泡软,洗净沥干待用
2. 川烫材料B待用
3. 油炸材料C待用
芡汁煮法:
1. 煮滚鸡高汤
2. 加入调味料 (调味至自己喜好)
3. 上碗待用
盆菜煮法:
1. 大白菜切块,铺在瓦锅底
2. 把炸过的芋头,豆根铺上
3. 把材料A,剩余的材料B,D铺面
4. 加入适量芡汁,加盖小火焖煮20分钟, 完成
*小提示:盆菜的食材,份量可跟自己喜好随意更换, 加减。

Chinese New Year Pen Cai 新春盆菜

Ingredients
- Ingredients (Set A)
5 mushroom
6 dried oyster
5 dried scallop
- Ingredients (Set B)
½ Chinese cabbage
1 broccoli
5 prawn
- Ingredients (Set C)
1 taro (peel and slice it)
1 pack of dou gen (cut it)
- Ingredients (Set D)
1 roasted duck drumstick (chop it)
1 chicken drumstick (chop it)
5 abalone (canned abalone)
1 fish maw (soak and cut it)
1 dried sea cucumber (wash and cut it)
- Seasoning
3 bowl of chicken broth (800ml)
3 tbsp oyster sauce
1 tbsp soy sauce
2 tbsp sesame oil
2 tsp sugar
1 tbsp tapioca starch (mix well with 1 tbsp water)
Instructions
- Preparations
- Soak all ingredients stated in Set A overnight, wash, blanch and set aside
- Blanch all ingredients stated in Set B and set aside
- Deep fry all ingredients stated in Set C and set aside
- Preparations (for Gravy)
- Bring chicken broth to boil
- Add in seasoning ingredients (to your own preference)
- Contain it with bowl and set aside
- Steps
- Cut Chinese cabbage to pieces and lay it at the bottom of the claypot
- Arrange fried taro, dou gan on top
- Arrange all ingredients stated in Set A, remainings of Set B, Set D on top
- Pour the gravy over the ingredients in the pot, cover with lid and steam with low heat for 20 minutes, it’s done!
