自发面粉是这美禄发糕的主要蓬松食材。自发面粉的主要成份是中筋面粉,再加入泡打粉和盐调拌而成的一种面粉类。只要加入适量的水,经过开水大火蒸煮一段时间,蒸糕就能达到蓬松‘开花’的效果。至于要做到‘开小花’还是‘开大花’的发糕,关键就在于蒸笼里的水气锅压。 锅压越大,发糕‘开的花’会是更蓬松,口感更松软。锅压较小的话,发糕‘开的花’相对的就会比较小,口感也较绵密。为了让大家可以看到发糕蓬松程度的对比,在这视频里,我们用了同样的美禄发糕配方,两个不同的蒸笼做了两款开花度不同的美禄发糕,与大家供勉之。
分量:6-7人份(15粒发糕6cm模)

材料A:
300克 自发面粉(过筛)
70克 砂糖
60克 玉米油
材料B:
280毫升 热水
80克/4条 美禄粉/ 方便包Milo Kosong粉
准备功夫:
1. 把热水加入美禄粉里,搅拌至美禄粉全溶化,待凉备用
做法:
1. 把材料A和美禄水混合,搅拌均匀至无粒状,静置10分钟,移入量杯
2. 把面糊倒入含有纸杯的模具内(9分满),放入含有滚水的蒸笼里
3. 盖上,大火蒸20分钟
4. 熄火起盖,发糕离锅,趁热享用

300 g self-raising flour (sieved)
70 g fine sugar
60 g corn oil
- Ingredients B
280 ml hot water
80 g / 4 sticks Milo Kosong sachet
Instructions
- Preparations
- Add hot water into Milo Kosong powder, stir well and set aside
- Steps
- Mix well all Ingredients A and Milo mixture, mix well until everything is dissolved, rest for 10 minutes
- Fill the mixture in the moulds fitted with paper cup (90% filled), insert them into the steamer *
- Cover with a lid, steam with high heat for 20 minutes
- Turn off the gas, retrieve the cakes from the steamer, enjoy it while it’s hot!
