如果买得到大石斑鱼,就用石斑鱼,鱼肉比较厚又少骨,更好吃。拍摄天我买不到石斑,所以只好用红枣鱼,也不错啦,只是肉质没石斑鱼肥美。糖醋酱的配菜,先用油炒两下(拉油)才加入糖醋酱。这样不只是可以去掉菜的青味,菜吃起来也会更爽脆,色泽更美丽。还有,饭要煲多点,因为这糖醋酱是很下饭的,小朋友会是要加饭滴。 分量: 4-5人份 准备时间:15分钟 煮时:40分钟 材料 A: 1 公斤 红枣鱼 1 汤匙 粟粉 2 汤匙 粟粉水 (1茶匙 粟粉+ 2汤匙 水) 适量 炸油 材料 B: ½ 粒 大葱头(切小块) ½ 粒 番茄(切块) 少许 红灯笼椒(去籽,斜切小块) 少许 青灯笼椒(去籽,斜切小块) 少许 青瓜(去籽,斜切小块) 材料C: 2汤匙 番茄酱 1汤匙 辣椒酱 1汤匙 白米醋 1汤匙 糖 ½碗 水 准备功夫: 1. 把粟米粉均匀的抹在鱼上,进油锅炸至金黄色,沥油出锅待用 2. 把材料C拌匀待用 做法: 1. 热锅,加入少许油,下材料B, 拌炒片刻,出锅待用 2. 把材料C加入锅,搅拌煮滚 3. 加入材料B,拌炒片刻,出锅,淋在鱼上 4. 趁热享用

Sweet & Sour Fish 糖醋鱼

minutesBest to use garoupa fish for this dish as it’s more meaty and less bone, we couldn’t get it on the filming day so we use red snapper instead, which is not bad too! Most kids love sweet & sour fish, how about yours?
Ingredients
- Ingredients A
1 kg red snapper
1 tbsp cornstarch
2 tbsp cornstarch mixture (1 tsp cornstarch + 2 tbsp water)
Adequate cooking oil
- Ingredients B
½ pc red onion (cut)
½ pc tomato (cut)
Some red bell pepper (deseed, cut)
Some green bell pepper (deseed, cut)
Some cucumber (deseed, cut)
- Ingredients C
2 tbsp tomato sauce
1 tbsp chili sauce
1 tbsp rice vinegar
1 tbsp sugar
½ bowl water
Instructions
- Preparations
- Apply cornstarch on the fish, deep fry until golden brown, drain & set aside
- Mix all Ingredients C well
- Steps
- Heat the wok, add some cooking oil, add Ingredients B, stir fry, retrieve & set aside
- Add Ingredients C into the wok, stir & bring to boil
- Add Ingredients B, stir fry, retrieve & put gravy on the fish
- It’s done!
