锅热油滚加点盐,鱼就能煎到美了。不要把锅热至冒烟才加入鱼,很容易爆油发生意外的,新手要注意。把煎过鱼的油加姜葱蒜爆成香油, 再加点酱油和糖调个酱,啊妈煎鱼就做好啦!

材料 A:
450克 黑鲳鱼
少许 盐
适量/半碗 油
材料 B:
30克 幼姜(去皮切丝)
3瓣 蒜头 (去衣切片)
2粒 红葱头(去衣切片)
材料C:
1棵 葱(切段)
1汤匙 酱油
2汤匙 热水
少许 糖
准备功夫:
1.把黑鲳鱼洗净,沥干水分待用
做法:
1. 热锅下油, 加入少许盐,拌匀
2. 热锅至出油纹,把黑鲳鱼加入锅里, 文火煎至两面金黄,沥油出锅
3. 同样的锅,加入材料B,文火爆炒至金黄色
4. 材料B沥油出锅
5. 去掉多余的油,加入材料C,炒匀煮至糖溶化
6. 出锅淋在鱼身上
7. 洒上爆过的材料B
8. 趁热享用

Don’t heat the pan until it’s smoking before adding the fish, as it can easily cause oil splattering. Use the remaining oil from frying the fish to sauté ginger, scallions, and garlic until fragrant, then add some soy sauce and sugar to make a sauce. And there you have it – Mom’s pan-fried fish is ready!

450 g black pomfret
some salt
adequate/half bowl cooking oil
- Ingredients B
30 g young ginger (peel & slice)
3 cloves garlic (peel & mince)
2 pc shallot (peel & slice)
- Ingredients C
1 stalk spring onion (cut)
1 tbsp soy sauce
2 tbsp hot water
some sugar
Instructions
- Preparations
- Wash the fish, drain & set aside
- Steps
- Add cooking oil & some salt into a hot wok, stir well
- Heat until oil mark is seen, add fish, fry with medium heat until both sides turn golden brown
- Add Ingredients B, stir fry until all ingredients turn golden brown
- Drain & retrieve Ingredients B
- Discard excess cooking oil, add Ingredients C, fry well until sugar dissolves
- Sauce the fish
- Dress it with Ingredients B
- Serve hot
