材料A:
1只 大鸡腿 (剁块)
1汤匙 酱油
1汤匙 蚝油
材料B:
5瓣 蒜(去衣拍扁)
1段/50克 幼姜(去衣切薄片)
1条/400克 苦瓜*
1碗 水(盖过鸡)
2汤匙 粟粉水 (½粟粉+2汤匙水)
2汤匙 油
材料C:
1条/200克 苦瓜(去籽切块)
10片 胡萝卜
1汤匙 黑豆豉
准备功夫:
1. 把材料A混合,腌30分钟
煮法:
1. 烧热锅,下油,加入蒜,姜片炒匀爆香
2. 倒入鸡块*,炒至变色
3. 加入水(盖过鸡肉), 炒均待滚
4. 转中小火,加盖煮12分钟
5. 起盖,加入材料C,炒匀
6. 加盖,继续焖煮3分钟
7. 起盖转大火,加入粟粉水勾芡
8. 熄火,上桌
* 小提示:喜欢吃口感较绵的苦瓜,可以在步骤2时就加入苦瓜与鸡肉一起炒

Braised Chicken with Bitter Gourd 苦瓜焖鸡

Ingredients
- Ingredients (Set A)
1 pc big drumstick (cut into pieces)
1 tbsp soy sauce
1 tbsp oyster sauce
- Ingredients (Set B)
5 cloves garlic (peel off skin, flatten it)
50 g ginger (peel off skin, slice it)
400 g bitter gourd *
1 bowl water (enough to submerge the chicken)
2 tbsp cornstarch water (½ cornstarch + 2 tbsp water)
2 tbsp oil
- Ingredients (Set C)
200g bitter gourd (remove seeds, cut into slices)
10 pc carrot
1 tbsp fermented black beans
Instructions
- Preparations
- Mix all ingredients stated in Set A and marinate for 30 minutes
- Steps
- Heat the wok with oil, add in garlic, ginger slices and saute
- Add in chicken pieces, fry until it changes color
- Add in water (enough to submerge the chicken), fry evenly until it boils
- Switch to medium-low heat, cover with a lid and cook for 12 minutes
- Lift the lid, add in all ingredients stated in Set C and fry evenly
- Cover the lid, continue braise for 3 minutes
- Lift the lid, switch to high heat, make gravy with cornstarch water
- Turn off the gas, it’s done!

- If you prefer softer texture of bitter gourd, it can be fried together with chicken during step 2
