蛇豆是贵吃点,不过口感还真的很好,油爆后是脆口的,再配以烧肉,超下饭!

材料:
蛇豆 – 1把/600 克 (切段)
烧肉 – 200克(剁块)
红萝卜 – 1棵/10片(去皮切片)
蒜 – 3瓣(去衣剁碎)
幼姜 – 1棵,30克(去皮切片)
绍兴酒 – 2汤匙
蚝油 – 1汤匙
粟粉 – 1茶匙(4汤匙水搅匀)
盐 – 少许
油 – 1汤匙
煮法:
1. 烧热一锅油(10汤匙),转中火油爆炒蛇豆至熟(大该2分钟),沥油待用
2. 同样的锅,去掉多余的油(剩1汤匙),烧热
3. 下姜,蒜,炒香
4. 加入烧肉,红萝卜,炒至烧肉变少许黄金色,
5. 倒入蛇豆,炒匀
6. 加入蚝油,绍兴酒,粟粉水, 盐,炒匀收干水
7. 熄火,上桌

Fried Roasted Pork with Snake Beans 烧肉炒蛇豆

minutesThis might not be cheap but the crispness of snake beans after frying, plus the ever lovely roasted pork, is wonderful!
Ingredients
1 stalk of snake beans (400g)
200g roasted pork (chop it)
10 pc carrot (peel off skin, slice it)
3 cloves of garlic (peel off skin, mince it)
1 ginger (peel off skin, slice it)
2 tbsp Shaoxing wine
1 tbsp oyster sauce
1 tsp corn starch (mix well with 4 tbsp water)
¼ tsp salt
1 tbsp oil
Instructions
- Heat the wok with 10 tbsp oil, switch to medium heat and fry snake beans until it is cooked (around 2 minutes), rinse and set aside
- Reuse the same wok, remove excess oil (retain around 1 tbsp oil), heat the wok
- Add in ginger, garlic and saute
- Add in roasted pork, carrot and fry until it turns almost golden brown
- Add in snake beans and fry evenly
- Add in oyster sauce, cornstarch (mixed with water earlier) and fry evenly until water dries up
- Turn off the gas, it’s done!
