雪山飞狐其实就是盐山烤鱼啦。很多年前不记得那间店家为这菜取名叫雪山飞狐,英文名叫Snow Mountain Flying Fox, 单读菜名就另人会心一笑。所以,当厂家Oasis Live Mall来做客时,就建议不如用他们家的小神器气炸锅做这道菜。做法简单,在鱼身上涂一层盐酱,送进气炸锅,不须看火,30分钟后鱼就烤好了。再来做个自调泰式沾鱼酱,简易又好吃的一道年菜就完成了。 分量:4-5人份 准备时间:15分钟 煮时:30分钟(烤时) 材料A: 1条(600克)金凤鱼 2支 香茅(拍扁) 材料B(盐浆): 600克 盐 5汤匙 蛋白 材料C(沾鱼酱): 3瓣 蒜头 1棵 葱 2条 小辣椒 1棵 芫荽 8粒 桔子(取汁) 2粒 酸柑(取汁) 1汤匙 魚露 2茶匙 糖 准备功夫: 1. 金凤鱼留鱗去内脏洗净抹干待用 2. 把材料B和C各自拌匀待用 做法: 1.在鱼腩內部搽少许盐,放入香茅 2.把鱼放在烘烤纸上,把盐浆涂满在鱼身上,放入气炸锅以200°C烤30分钟 3.烤鱼出锅,去掉盐巴层 4.淋上沾酱,趁热享用

minutes“Flying Fox of Snowy Mountain” is another cheeky name for this dish, sounds like a big dish but it’s actually very easy to make with an air fryer!
Ingredients
- Ingredients A
1 pc (600g) tilapia
2 pc lemongrass (smashed)
- Ingredients B (salt mixture)
600 g salt
5 tbsp egg white
- Ingredients C (dipping sauce)
3 cloves of garlic
1 pc spring onion
2 pc cili padi
1 pc coriander
8 pc calamansi (juice)
2 pc lime (juice)
1 tbsp fish sauce
2 tsp sugar
Instructions
- Preparations
- Gut the fish but remain its scale, clean and set aside
- Mix Ingredients B and C separately
- Steps
- Apply some salt inside the fish belly, insert lemongrass
- Place the fish on a baking paper, cover the whole fish with salt mixture, bake in the air fryer at 200°c for 30 minutes
- Retrieve fish, remove the salt crust
- Dress with sauce, it’s done!
