顶上香椒膏的制作成份就只是油,辣椒干,葱头,蒜头,糖和盐。因为纯粹是辣椒膏,用来做菜的变化会是更广。例如叁巴酱,只须加入叁巴基本食材如虾米,亚叁膏就能做出我们家常的叁巴酱,省时又省力。

材料:
100g 臭豆(切半去芯)
7只/200克 大虾(去壳)
12粒/200克 带子
1只 鱿鱼(切片刮纹)
2汤匙 虾米(剁碎)
4瓣 蒜米 (去衣舂泥)
2粒 小葱头(去衣舂泥)
5条 小辣椒(拍扁)
3汤匙 油
调味料:
2汤匙 顶上香椒膏
½ 茶匙 盐
1茶匙 糖
1茶匙 亚叁膏酱 (加5汤匙水混合)
煮法:
1. 烧热锅,下油待热
2. 加入虾米,炒匀爆香
3. 加入蒜泥,葱头泥,小辣椒和顶上香椒膏, 炒匀爆香
4. 下鱿鱼,虾,带子和臭豆,炒匀
5. 加入亚叁水,盐和糖, 炒匀盖上煮2分钟
6. 熄火,上桌

minutesNam prik pao is a pure chilli paste so you can be creative with its application. For example, just add ingredients like dried shrimp, assam paste and you can turn nam prik pao into a delicious assam sauce!
Ingredients

100 g petai (cut into halves, remove core)
7 pc / 200 g large prawn (remove shells)
12 pc / 200 g scallop
1 pc squid (cut into pieces, remove skin membrane)
2 tbsp dried shrimp (mince it)
4 cloves garlic (peel off skin, smash it)
2 pc shallot (peel off skin, smash it)
5 pc cili padi (pound it)
3 tbsp oil
- Seasonings
2 tbsp nam prik pao (Thai chili paste)
½ tsp salt
1 tsp sugar
1 tsp asam paste (mix with 5 tbsp of water)
Instructions
- Heat up oil in a pan.
- Add in dried shrimp, fry evenly and saute until fragrant.
- Add in garlic paste, shallot paste, cili padi and nam prik pao, fry evenly and saute until fragrant.
- Add in squid, large prawn, scallop and petai , fry evenly.
- Add in asam paste mixture, salt and sugar, fry evenly, cover with a lid and cook for 2 minutes.
- Dish up and serve!
