材料A:
马鲛鱼 – 500克(4 片)
番茄 – 1粒 (切4块)
羊角豆 – 7条 (去头)
叻沙叶 – 10支
亚叁膏 – 1汤匙
南姜 – 1块 (20克),拍扁
香茅 – 1支,拍扁
姜花 – 1支,切半,少许切丝
水 – 1000 毫升
油 – 6汤匙
材料B:
小葱头 – 5粒
蒜头 – 2粒
黄姜 – 1块 (20克)
红辣椒 – 5条
小辣椒 – 3条
辣椒干 – 5条, 泡软,去头剪段
巴拉煎 – 1块 (10克)
调味料:
盐 – ½ 茶匙
糖 – 2茶匙
准备功夫:
1. 把材料B,放入搅拌机加少许水,搅幼
做法:
1. 烧热锅下5汤匙油,加入材料B,3支叻沙叶,香茅,南姜,炒香 (大概15分钟)
2. 倒入水,姜花,亚叁膏,加盖,煮15分钟,起盖,调味
3. 加入鱼,番茄,羊角豆,剩余的叻沙叶,煮至鱼熟·(大概8分钟)
4. 熄火,上卓,晒上姜花丝,完成

Asam Pedas Mackerel 亚叁酸辣马鲛鱼

Ingredients
- Ingredients (Set A):
500g mackerel
1 tomato (cut into 4 pc)
7 ladyfingers
10 stalks of daun kesum
1 tbsp tamarind paste
1 galangal (flattened)
1 lemongrass (flattened)
1 torch ginger bud (cut it, slice it)
1000 ml water
6 tbsp oil
- Ingredients (Set B):
5 shallot
2 cloves of garlic
1 turmeric (20g)
5 red chilli
3 cili padi
5 dried chilli
1pc of belacan (10g)
- Seasoning:
½ tsp salt
2 tsp sugar
Instructions
- Preparations:
- Add all ingredients stated in Set B above into mixer, add some water then mix it
- Steps:
- Heat the wok, add 5 tbsp of oil, add all ingredients stated in Set B, 3 stalks of daun kesum, lemongrass, galangal and saute it for around 15 minutes
- Add in water, torch ginger bud, tamarind paste, cover it and cook for 15 minutes, then uncover and season it
- Add in mackerel, tomato, ladyfingers, 7 stalks of daun kesum, cook until the fish is done (around 8 minutes)
- Turn off the gas, dress it with torch ginger bud slices and it’s done!
