荷兰薯(马铃薯)有很多种类。 本地市场较常见的有褐皮荷兰薯和白肉荷兰薯。褐皮荷兰薯口感绵密。 至于白肉荷兰薯,有口感绵密和紧实的。紧实的白肉荷兰薯烹调后较不易变形,适合焖煮。因为不同种类的荷兰薯,会煮出不同口感的荷兰薯焖鸡。所以,要选用对的荷兰薯,才能做出自己喜欢的荷兰薯口感。群友们,留意哦!

材料A:
1只 大鸡腿 (剁块)
1汤匙 酱油
1茶匙 蚝油
材料B:
4瓣 蒜(去衣切片)
1粒 大葱头(去衣切4边)
4粒 荷兰薯(去皮切块)
1碗 水(盖过鸡)
1茶匙 黑酱油
适量 盐
2汤匙 粟粉水 (1茶匙粟粉+2汤匙水)
1汤匙 油
准备功夫:
1. 把材料A混合,腌制15分钟
2. 把荷兰薯块炸至金黄色,沥油待用
煮法:
1. 烧热锅,下油,加入蒜,炒匀爆香
2. 倒入鸡块,炒至变色
3. 加入马铃薯和大葱头,拌炒片刻
4. 加入水(盖过鸡肉)和黑酱油,炒均待滚
5. 转中火,加盖煮15分钟
6. 起盖,加入盐,转大火,炒匀调味
7. 加入粟粉水勾芡, 完成
* 小提示:绵身的荷兰薯焖煮5分钟就会糊掉了,而硬身的荷兰薯则需要焖煮大概10-15分钟才会软透。所以,焖煮时间须跟随荷兰薯的种类/自己口感的喜好自行做调整。

Potato & Chicken Stew 荷兰薯焖鸡

Ingredients
- Ingredients A
1 drumstick (chopped)
1 tbsp soy sauce
1 tsp oyster sauce
- Ingredients B
4 cloves garlic (peel off skin, slice it)
1 onion (peel off skin, cut into 4 parts)
4 potato (peel off skin, dice it)
1 bowl water (enough to submerge the chicken)
1 tsp dark soy sauce
Some salt
2 tbsp cornstarch mixture (1 tsp cornstarch and 2 tbsp water)
1 tbsp oil
Instructions
- Preparation
- Mix all ingredients A, marinate for 15 minutes
- Deep fry potato until it turns golden brown, rinse and set it aside
- Steps
- Heat the wok with oil, add in garlic and saute
- Add in chopped drumstick and fry until it changes colour
- Add in potato and onion, fry quickly
- Pour in water enough to submerge the chicken, add in dark soy sauce, fry evenly and bring to boil
- Switch to medium heat, simmer with a lid for 15 minutes
- Lift the lid, add in salt, switch to high heat, fry evenly and season
- Add in cornstarch mixture to make gravy, it’s done!
