煮大沙谷没捷径,时间是煮出晶莹剔透大沙谷的关键。水煮,余温焗,再水煮,余温焗,方能把大沙谷煮剔透。要慢火煮,不能大火煮,因为大火在沙谷中心还没煮熟时,外层就已经被煮糊掉了。
材料:
150克 大沙谷/西米
3000毫升 水*
煮法:
1. 把水煮滚,加入大沙谷
2. 转小火,免盖,煮30分钟,期间要搅拌
3. 熄火,盖上,余温焗2个小时
4. 起盖,开中火,再把水煮滚,转小火,免盖,煮15分钟,期间要搅拌
5. 熄火,盖上,余温再焗2个小时
6. 起盖,盛起大沙谷,沥水,过凉水洗掉粘稠体
7. 大沙谷沥水,收入冰箱冷藏,口感更好
8. 加入自己喜爱的甜品,就可以享用了
*小提示:
1. 水煮的过程中,如果水份开始变粘稠,须自行再加热水
2. 煮熟的大沙谷会是比原本的大3倍

How to cook big sago? 如何煮出晶莹剔透大沙谷?
Course: DessertCuisine: ChineseThere is no shortcut to cooking sago. Timing, steps, and heat level are all important to make sago big and tasty!
Ingredients
150 g big sago
3000 ml water*
Instructions
- Bring the water to boil, add in big sago
- Turn to low heat, cook without the lid for 30 minutes, stir from time to time
- Turn off the gas, cover with the lid and leave it there for 2 hours
- Lift the lid, bring the water to boil again with medium heat, then switch to low heat and cook for another 15 minutes, stir from time to time
- Turn of the gas, cover with the lid and leave it there for 2 hours
- Lift the lid, retrieve the big sago and rinse to remove sticky substances with water
- Drain the sago, chill in the fridge for better texture
- You can apply the sago to your favourite desserts, enjoy!

- You might need to add hot water during boiling, if the water become condensed
- Sago will grow 3 times the size after cooked
