这简单的蒸鱼酱超下饭唷!来人,快给本宫送上两碗饭!

材料:
白鲳鱼 – 1 条 (300克)
香菜 – 少许(切段)
葱 – 少许 (切段)
蒸鱼酱材料 :
小辣椒 – 3条 (跟自己辣度喜好)
幼姜 – 1 段,剁碎 = 2大汤匙
小葱头 – 4 粒,剁碎
蒜头 – 2 粒,剁碎
豆瓣酱 – 2大汤匙
酸梅酱 – 2小汤匙
糖 – ¼ 小汤匙
水 – 3大汤匙
油 – 2大汤匙
蒸鱼酱煮法:
1. 烧热锅加油,下蒜头,小葱头炒至香
2. 加入幼姜,爆香炒均
3. 下豆瓣酱,酸梅酱,水炒均
4. 加糖调味(也可加如酱油,跟自己喜好,增加咸度 ),上碗待用
蒸鱼法:
1. 把鱼放入含有滚水的锅内,大火蒸3分钟飞水
2. 把蒸鱼酱到入鱼上,再放回锅内蒸7分钟*
3. 上卓,洒上香菜和葱段,完成。
* 小提示:可用铁叉叉入鱼最厚得部分测试鱼的熟度,叉得过鱼身就表示鱼已经熟了,叉不过就得再蒸煮1-2分钟。

Steamed White Pomfret with Minced Bean Paste 酱蒸白鲳鱼

Ingredients
- Ingredients:
1 white pomfret
1 strand of coriander (cut it)
1 strand of spring onion (cut it)
- Ingredients for sauce:
3 cili padi (your own preference)
1 pc of ginger (mince it to 2 tbsp)
4 shallot (mince it)
2 cloves of garlic (mince it)
2 tbsp minced bean paste / taucu
2 tsp sour plum sauce
¼ tsp sugar
3 tbsp water
2 tbsp oil
Instructions
- Steps to prepare sauce:
- Heat the wok, add in garlic, shallot and saute
- Add in ginger and saute
- Add in minced bean paste, sour plum sauce, water and fry evenly
- Add in sugar (soy sauce is optional, according to your preference), sauce is ready
- Steps to steam fish:
- Steam the fish over high heat for 3 minutes, discard the water afterwards
- Add in sauce (prepared earlier above), steam it again for ~7 minutes*
- Done! Add in coriander, spring onion slices

Notes
- To check doneness of the fish, gently poke a fork into the flesh of the fish and twist gently. If the flesh flakes apart easily, then the fish is done
