有句话 ‘九层塔,十里香’,可想而知九层塔的气味有多重,有人爱也有人怕。怕的人觉得它很臭,可小编怎么闻都觉得它好香,用来炒鸡配饭吃,好吃到不得了!
分量: 4 – 5人份
需时: 45分钟
材料A:
鸡腿 – 2只 (剁块)
酱油 – 1汤匙
蚝油 – 1汤匙
粟粉 – 1茶匙
盐 – ½ 茶匙*
材料B:
蒜 -– 5瓣 (去衣拍扁)
小葱头 – 5粒 (去衣切薄片)
九层塔 – 1把/ 10支(去支留叶)
辣椒干 – 10条 (泡软去籽切段)
水 –- 1碗(盖过鸡)
黑酱油 – 1 茶匙
油 – 1汤匙
准备功夫:
1. 把材料A混合,腌30分钟
煮法:
1. 烧热锅加油,蒜,小葱头,辣椒干爆香
2. 倒入鸡块,炒至变色
3. 加入黑酱油,倒入水(盖过鸡肉), 炒均
4. 转中小火,加盖煮20分钟
5. 起盖*转大火,加入九层塔,快炒30秒
6. 熄火,上桌
*小提示:自行调味,如果觉得不够咸可加盐,如果喜好带甜,可再加糖

Stir-Fried Chicken with Basil 九层塔炒鸡

Ingredients
- Ingredients (Set A)
2 drumstick (cut it)
1 tbsp soy sauce
1 tbsp oyster sauce
1 tsp cornstarch
½ tsp salt*
- Ingredients (Set B)
5 cloves of garlic (peel off skin, flatten it)
5 cloves of shallot (peel off skin, slice it)
1 strand of basil (use leaves only)
10 dried chilli (soak, remove seeds, slice it)
1 bowl of water (enough to submerge the chicken)
1 tsp dark soy sauce
1 tbsp oil
Instructions
- Preparations
- Mix all ingredients stated in Set A well and marinate for 30 minutes
- Steps
- Heat the wok with oil, add in garlic, shallot, dried chilli and saute
- Add in chicken drumstick, fry until it turns golden brown
- Add in dark soy sauce, add in water enough to soak the chicken, fry evenly
- Switch to medium heat, cover with a lid and cook for 20 minutes
- Lift the lid*, switch to high heat, add in basil, fry quickly for 30 seconds
- Turn off the gas, it’s done!
