1包 长寿面(400克)
200克 肉眼(切片)
2条 鱼饼(切片)
1把 菜心(200克,切小段)
5瓣 蒜(去衣剁末)
3粒 小葱头(去衣剁末)
3汤匙 油
调味料:
1汤匙 蚝油
1汤匙 酱油
1汤匙 黑酱油
½ 茶匙 麻油
½ 茶匙 盐
1碗 水(250毫升)
准备功夫:
1. 烧热1锅水,下长寿面,煮5分钟,过冷河,沥干待用
2. 把调味料混合待用
煮法:
1. 烧热锅,加入油,爆香葱头和蒜米末
2. 下肉片,炒至变色
3. 加入鱼饼炒片刻
4. 下调味料待滚
5. 加入长寿面和菜心,炒至收干水
6. 熄火,上桌完成

Homie Fried Longevity Noodles 家常炒长寿面

minutesIt is a must to prep the noodle hot & cold first, and braise it for 2-3 minutes to get the best texture of the noodle
Ingredients
- Ingredients
1 pack of longevity noodles (400g)
200g pork
2 fish cake (slice it)
200g choy sum
5 cloves of garlic (peel off skin, mince it)
3 shallot (peel off skin, mince it)
3 tbsp oil
- Seasoning
1 tbsp oyster soy sauce
1 tbsp soy sauce
1 tbsp dark soy sauce
½ tsp sesame oil
½ tsp salt
1 bowl of water (250ml)
Instructions
- Preparations
- Bring a wok of water to boil, add in longevity noodles and cook for 5 minutes, rinse in cold water, then strain and set it aside
- Mix all the seasoning ingredients well, set it aside
- Steps
- Heat the wok with oil, saute shallot and minced garlic
- Add in sliced pork, fry until it turns colour
- Add in sliced fish cake and fry quickly
- Add in seasoning and bring it to boil
- Add in longevity noodles and choy sum, braise till fairly dry
- Turn off the gas, it’s done!
