西式烤鸡着重于运用多种香料来提味。而这道烤鸡,除了用上了新鲜的百里香(Thyme)和迷迭香(Rosemary), 还大量的加入了卡真香料粉(Cajun seasoning)增加香气和提味。什么是卡真香料粉?卡真香料粉是多种香料例如紅椒粉,大蒜粉,洋蔥粉,黑胡椒,小茴香粉等等混合而成的一种调味香料。香氣強烈,滋味浓郁不辛辣,是西式料理常用的一种香料粉。吃惯了用五香粉,蚝油,酱油腌制调味的烧肉烧鸡,下次就试做这卡真香料烤全鸡吧,让味蕾来个新尝试! #食谱示范OasisLiveMall #ChefHenry 分量:4-5人份 准备时间:30 分钟 +- 煮时:50分钟+-(烤时) 材料: 1只 全鸡(约1.5公斤) 1支 百里香 1支 迷迭香 100克 胡萝卜(去皮) 100克 白洋葱 (去衣) 5瓣 蒜头 3粒 红皮马铃薯 (洗净) 适量 油 适量 幼盐 适量 黑胡椒碎 适量 卡真香料 做法: 1. 把红皮马铃薯切大块,淋上2汤匙油,适量的盐,胡椒和卡真香料调味拌匀待用 2. 胡萝卜和白洋葱切小块,把蒜米压扁后,和百里香,迷迭香拌匀,塞进鸡肚里。然后加入2汤匙的卡真香料,适量的油,幼盐和黑胡椒腌制全鸡的外层30分钟 3. 把鸡腿交叉,用锡纸条绑紧。然后把鸡翅向上折,以便烤熟后的全鸡外观更得体美观。把红皮马铃薯加入气 炸锅内锅里,然后把腌制了的全鸡放入,以160度烤35分钟 4. 等待的同时,把1汤匙的油和2汤匙的卡真香料加入个小碗里,拌匀备用 5. 当时间完了后把鸡拉出来,抹上一层卡真香料油在鸡的表层。继续以130度烤15分钟或至鸡烤熟即可 小提示: 1. 卡真香料是种混合型香料,如喜欢重口味可多加香料的分量 2. 干性和新鲜的百里香,迷松香味道和效果会稍微有些不一样,建议用新鲜的 3. 可以随自己喜好以其他品种的马铃薯替代红皮马铃薯

Cajun Herbs Roasted Whole Chicken 卡真香料烤全鸡

minutesThis roast chicken is full of flavour, visually appealing, and it is so easy to make with an air fryer!
Ingredients
1 pc whole chicken (around 1.5kg)
1 stalk thyme
1 stalk rosemary
100 g carrot
100 g onion
5 cloves garlic (unpeeled)
3 pc red-skinned potato
Some cooking oil
Some salt
Some crushed black pepper
Some cajun spice mix
Instructions
- Peel and cut the carrot and onion into small chunks, crush the garlic, then stuff into the chicken with thyme and rosemary, marinate the chicken with about 2 tbsp of cajun seasoning, some cooking oil, salt and black pepper for at least 30 minutes
- Cut the potato into large chunks and then season with oil, salt, pepper and cajun seasoning
- Tie the chicken leg with aluminum strips and fold the chicken wing for a better presentation after roasting, place the potato into air fryer basket and then place the chicken on top, start roasting the chicken in Doshio Air Fryer at 160°c for 35 minutes
- While waiting, mix 1 tbsp of cooking oil with 2 tbsp of cajun seasoning in a small bowl, set aside for later use
- When time is up, retrieve the chicken and apply a layer of cajun oil on the surface of the chicken, continue roasting at 130°c for another 15 minutes or until fully cooked

Notes
- You can increase the portion of cajun seasoning if you prefer a heavier taste
- There is a difference between dry vs fresh thyme, suggest to use the fresh thyme here
- You can opt for another type of potato here
